Vitamin C en masse

The result from an experiment of "juicing" with the blender. Here I added 1 whole grape fruit, one whole orange and the left over passion fruit seeds from my passion fruit cheese cake. The result was kind of a mix beween a juice and a smoothie, packed with vitamin C.

The simplest chicken in oven dish

This so easy to make and still makes the perfect middle of the week dinner for guests, atleast along with a nice glas of white wine. I am not sure its even a recipie?

Anyway, in a form, put organic spinach, some cherry tomatoes, basil and fresh chicken. Top with chopped garlic if you wish and sprinkle with some olive oil, sea salt and fresh pepper.

In the oven it goes for about 20 minutes (if you wish, you can also fry the chicken gently in some olive oil before it goes in the form for some more color). Once the chicken is ready, top with some buffalo mozzarella (Coop Fine Food has a good option). Some steamed broccoli is also nice to serve with. Cook with love, as always <3

Passion fruit cheesecake

Yummy cheesecake! However, please do let this cutie sit overnight before enjoying. I had to bake it the same day as I had guests and it was alot better today when I had some. Original recipie from Leila.

For the crust, crush 150 gram of gingerbread cookies and 150 grams of Digestives. Use either a blender or in a plastic bag. Put them into your form and add 150 gram of melted butter. Mix togeahther and make flat. Bake in the over at 175 degrees for 10 minutes.

Mix 600 gram of Philadelphia cheese and 250 gram of Kvarg (not the low fat one) with a whisk until creamy. Add 1 dl of sugar and 1 dl of maizena. Blend. Add 3 free range eggs one at the time.

Use the juice from approx 15 passion fruits, it should make about 1.5 dl. Add to the batter. Now, the original recipe calls for 200 gram of melted white chokolate. I did not add that but its accordning to taste.

Pour the batter over the crackers and bake for 40 min approx still in 175 degrees. Then turn the oven off and let it sit for about 30 min in the after heat.

Let cool in fridge overnight and decorate. I used strawberries and mint leaves.

The worlds best carrot cake

I promise! The recipie is again from Leila however I add sligtly more spices and make the frosting quite alot different.

Whisk 3 organic eggs with 3 dl of sugar. Mix in a separate bowl 3 dl of flour, 1 tsp of vanlila sugar, 3 tsp of baking powder, 2 tsp of cinnamon, 2 tsp of cardemom , 1 tsp of dried ginger and a pinch of salt. Gently blend into the egg and sugar. Add 4 1/2 dl of finely grated organic carrots and 1 1/2 dl of sunflower oil.

Fill a non stick form and bake in the middle of the oven for about 55 min, its not supposed to be sticky.

Let cool off completely.

To make the frosting mix 200 gram of full fat Philadelphia cheese, the zest of one lime, and vanilla sugar to taste.

Swirl the cake with the frosting and decorate according to taste. These berries (not sure of the name?) are one of my favorites to decorate cakes with. You can find them at Coop when in season.

Zen around the world

I will launch a new category today called Zen around the world. I am not exactlly travelling the world lately but really like the idea of a green sort of community that are sharing travelling recommendations on everything to cool (healthy) restaurants, great yoga studios and organic cafes around the globe. So lets try!

Picture from my favorite organic cafe in Hong Kong where I lived earlier this year. A separate post on that later on.

Sara's Bakery - Torta della Nona

This is an italian almond and ricotta cheese cake that orginally comes from Leila - my all time favorite when it comes to baking. Its perfect before for ex. going out dancing (which I did after) since it has a low flour content (compensated by cream cheese and eggs). Its a classic Italian cake and very simple to make.

Whisk 150 grams of organic butter and 300 gram almond paste creamy. Add a total of 6 free range eggs, one at the time. Add 250 grams of Ricotta cheese, the zest of one well washed orange and one lemon and one grated "bitter almond" ( I actually could not find it in the swiss stores so had to use the flavour essance - big minus!). Finally add 1/2 dl of flour. Just gently stir everything togeather - never whisk a cake batter since it makes the cake less fluffy.

Then everything goes in a cake form. Sprinkle with pine nuts and bake in 175 degrees for around 30 minutes. Try with a tooth picker, it is not supposed to be sticky.

Before serving, sprinkle with powder sugar. Serve with rasberries and some lightly whipped cream (the halbrahm, 25% fat is peeerfect).

Saturday morning - trusting

I watched one of Gabrielle Bernsteins amazing videoblogs earlier about trusting.
Trusting that the universe has your back. And that everything will be fine.

Simple and delish french goats cheese salad

This is sooo easy to make and still qualified for my saturday night mini dinner party.
Steam some green beans, and blend in a large bowl with organic spinach. Toss with a dijon mustard vinegrette (olive oil, balsam vinegar, diljon mustard, sea salt and pepper). Top the salad with pieces of chicken, a good goats cheese, roasted pine nuts and fresh figs. Enjoy with a good white wine!

Healthy carrot and cottage cheese bread

These are YUMMY and supereasy to make! For approx 20 of them, mix 50g of yeast with dl of finger warm water. Once transparent, add 4 dl of finely grated carrot (organic!), 2.5 dl cottage cheese, 2 tsp of salt and one tablespoon of a natural kind of oil. You need 13-14 dl of flour and maybe 4 dl of a healthier type of flour (or make the propotions as you wish). Add a little at a time and work to a nice dough. Please note that it will be quite sticky because of the cottage cheese. Do not add too much flour! I actually used muffins form and my muffin tray to avoid the mess and adding too much flour. Went fine!

Bake in 225 degree oven for approx 20 min. Lovely to serve with cream cheese, goes very well with the carrot in the bread. Enjoy the baking, and remember that its good for the soul too!

Simple green and blue smootie

A really good trick to make a tasty green smoothie is to throw something frozen in there. For this one i mixed a handful of organic spinach, some fresh orange and passion fruit juice, 1/3 of a banana (fairtrade!) and a handful of frozen blueberries. Ready in 1 minute and so good for you!

NNTs

Do you guys know of Marie Folero? I simply adore her and her approach.
In the youtube clip below she talks about NNTs, daily non-negotiable activities. For ex. green juices, meditation or similar. I also really enjoyed reading the comments below.

http://marieforleo.com/2011/07/when-you-doubt-everything/

My NNTs are currently:
1. Morning and evening yoga (minimum is one sun salutation on each side, and I do more if I feel like it and nothing more if I dont)
2. Evening meditations from Gabrielle Bernstein

On a weekly level its def. complete sunday grooming incuding body scrub, facial mask and hair mask.

Very improvised smoothie - 1 organic banana, some frozen blueberries (1/2 dl maybe?), one handful organic spinach and a splash of orange-passion juice. Blend and enjoy. It was actually supergood! Missing the sun today, so here is also a picture from last week.

Homemade ice tea

This is so simple! Depending on when you plan to drink it, chose your favorite bag green or herbal tea ( I like green in the morning and herbal for after 3-4ish in the afternoon).

Just boil one liter of water, brew with your teabag of choice and let cool off. Add fresh ginger, lemon or fresh mint according to taste. Let cool in the fridge overnight and enjoy the following day. In the summer addig ice cubes would be a nice touch but now in wintertime its really not necessary. Keep green and hydrated, enjoy!

Herbal teas are a great way to keep hydrated.

For the kitchen?

I am looking for 1-2 good pictures to frame and put on my kitchen wall. My kitchen style is kind of cosy, colourful and bohemian chic. Maybe this one?

Banana bread cupcakes by Eat Live Run

I just found this cosy blog Eat Live Run and this recipie for the genious concept Banana Bread Cupcakes. I really enjoyed reading the introduction how this recipie came up 7.30 in the morning from a major craving for banana bread and frosting. And how it was made sipping Earl Grey tea in pajamas pants and leopard slippers.

Always rememeber

Monday breakfast

Monday! For breakfast today I had swedish oatmeal with extra fibre, some organic yoghurt and quark ( I like to mix since Quark contains alot of proteins), swedish lingonberry jam from IKEA and coffee with organic milk. Ready to start the day!

Body Shape at Holmes Place

Today I tried a new class at Holmes Place Jelmoli - Body Shape followed by 20 minutes running.

Its been 2 weeks that I havnt been able to work out because of a classical pre-winter cold.

The class was great for legs and abs, I think my triceps will be shaking tomorrow!

I worked out in my favorite Lulu Lemon top, the Y power in my favorite colour White.

Beautiful on the way to the gym...

Sunday dinner

A simple, healthy and asian-inspired meal perfect after hiking and alot of Swiss cheese and wine.

For this, prepare 1 pack of glas nudles accordning to the instruction on the package. Wash some organic spinach and other green leafs (remeber to rotate your intake of green leafs!). Slice up an avocado and one mango. Chop up some cilantro.

Mix up a fast dressing with some oil, lime juice, red chili and japanese soy. Toss with the salad.

Stir-fry some prawns and serve! Dinner is ready in 15 minutes max! To sprikle some organic mix seeds is a nice touch.

Hiking Uetliberg

This is already the second post about Uetliberg in the hiking category. Since its so easy to access, close to the city and able to present some beautiful views its already one of my Zürich favorites.

To get to the peak, take the S12 for gleis 2 at HB. It departs 05 and 35 each hour. The plan we had yesterday was to hike 2-3 hours in total with a lunch break. This was accomplished and we decided to end the hike in Thalwil which was perfect to get back to Zürich Enge in only 10 minutes.

Now is really the perfect hiking season for this hight and its just perfect for a sunday. No need to get up early to travel hours to get up in the mountains and easy to get home.

Lily Power

For me, fresh flowers is one of the most important things to make a house a home. They simply makes me happy and calm.

I always keep fresh flowers in the house and for that reason, I cant always get them at the fancy flower shops at Globus or Parade Platz as I would wish. I constantly look for good budget options. For lilies, there is def. a great one at Migros - 5 BEAUTIFUL lilies for 8.90 CHF.

To best take care of your lilies, give them a fresh cut and add the flower nutrition to water around 30 degrees.

I got these beauties a week ago and still this powerful. And makes the house smell so nice!
