Strawberry green

Remember, when adding strawberries to a green smoothie, the result can be a bit brownish. Not to worry, the taste is still amazing! For a strawberry green vitamin kick, blend some nussli salad with a large handful of strawberries, some mango and a splash of fresh orange juice. I also added some fresh ginger - delish!

Vietnamese Spring Rolls

My lovely friend Åsa is in town this weekend and made me these superfresh springrolls for dinner. Its one of those great dishes that looks very fancy and complicated but that actually are really simple to make. You need to buy asian rice paper to make this. I bought mine in Asian Laden by the Tram stop Smiede Widekon.

Soak the rice paper in cold water for a few minutes until soft. Put on a wet surface for exemple a cutting board and fill them with whatever you are in the mood for! We had crabsticks, avocado, cucumber, carrotts and a bit of coriander. Roll togeather and cut to 3-4 pieces.

Great to serve with a dark leafy spinach salad and a sesamy-soy-ginger-lemon dressing and some sweet chili sauce for dipping.

Happy Saturday!

Saturday strawberry smoothie

Healthy mango rasberry crumble

Inspired by the beautiful sunny weather I made this healthier crumble tonight. In a form, mix fresh mango and rasberries and a few blackberries if you feel like it (I used frozen ones that I defrozed). Top with a crumble of 0.5 dl whole grain flour, 1 dl oats, 50 gram of organic butter and 1-1.5 tablespoons of brown sugar (Just mix everything togeather in a bowl). Bake in 175 degrees for 20-25 degrees. Serve with some nice vanilla icecream or lightly wipped cream.

This recipie makes a quite small pie, for approx 3 people.

Picture before topping crumbles comes on.

Enjoy and smile this weekend!

Green tropical sunny smoothie

Now I remember why I LOVE green smoothies! Inspired by the springy sunny weather I blended 1 organic banana, a handful of strawberries, half a pinapple, a large bunch of organic spinach and organic orange juice. The result was thick, creamy and superfresh. Springfeelings in a glass!
