Important to start the week with a good and healthy lunch. I had some brown rice left and even though its not my favorite for a salad, I really avoid to throw food out. We shouldnt! So in with organic spinach, rocket salad, fresh basil and parsly. Organic cherry tomatoes and some black olives. Dressing of some fresh lime, olive oil and herbal salt and pepper. Mix togeather. I will serve with som cottage cheese tomorrow for more protein. Simlple, yummy and in-expensive! Skipping my yoga class tonight to do the last recovery from my cold and just unpack a bit more.
