Gratinated rasberries


The perfect way to end the week! A simple and delicious desert that takes minutes to make and makes you smile.

Gratinated rasberries (original recipe from Monika Ahlberg)

400 grams of rasberries (fresh or frozen)
3 eggs
1,5 dl of sugar
1 lime, zest and juice

1. Whisk together eggs and sugar til fluffy and add the zest and juice from one lime
2. Spread out your rasberries in a nice form
3. Top up with the fluffy egg mix
4. Gratinate in the top of the oven for about 10 minutes at 225 degrees (be careful! My version above was saved just in time!)

Vanilla ice cream is a nice way to serve it. I hope you will enjoy!

Summer in a pie form!




Please excuse this headline which easily can be found to be slightly too cheerful. Nevertheless. I can not think of a better one for this lovely cake that just contains everything thats good about summer: fresh berries, blue and white china (all though I use this favorite from Le Cruset all year round), lemon curd, cream cheese and eating on the balcony


We are literary raining away in Zurich today and I am thinking summer is definitely over.

Its days like this when I you need some sunshine in the form of.... well in this case a white chocolate cheesecake with lemon curd and fresh berries?

Healthy Banana & Chocolate Cookies


Sunday is baking day! Today I decided for a recipe from one of my old Elle a la Carte, both sugar and  gluten free.

2 mashed bananas
0.75 deciliter of melted coconut oil
3 dl of rolled oats
1 dl of coconut flakes
1 dl of almond flour
1/2 table spoon of cinnamon
1/2 table spoon of baking powder
50-100 grams of dark chocolate

Oven: 175 degrees.

1. Mix bananas and the melted coconut oil.
2. In a separate bowl mix together all remaining dry ingredients and add to the liquid mix.
3. Chop up the chocolate and add.
4. Click out little rounds and bake in a 175 degrees for around 15 minutes.

Baking Therapy



What is it about baking that makes it the favourite activity for so many women  around the world? Baking for me is creativity in its best form. Kitchen love. A chance to breath. And sometimes it can be healing. Just for a short moment, all that matters is chopping up dark chocolate chips, creaming egg and sugar and getting the perfect crust.  Baking is something that can seam so insignificant, and that at the same time is so important. I

"Gardening is cheaper than therapy and you get tomatoes" I read somewhere recently. True. But even better, baking is cheaper then therapy and you get....in this case saffron biscottis. And ginger snaps!

Mini cherry pies


Yesterday was mine and <3s anneversary (for 6 months!). So there was some baking - but not by me :)
He made me these super cute mini cherry pies that we enjoyed with loads of tea. Basically they are made from ready made puff pastry and a muffin tray - just cover the bottom of the tray with the paste. Fill with whichever fruit you like, we had cherries. Dust some sugar over to taste, add a lid also of the pastry and bake for 10-15 minutes depending on your oven, in about 200 degrees. Love love love

Pumpin and sesam crackers

These are carb free wich can be a nice change and SO easy to make. Simply put 1 dl each of pumkin seeds, sesamy seeds, sunflower seeds and linseeds (these are the most important ones since they will create the gel that holds the crackers togeather!) in a large bowl. Add enough water to cover and let sit over night. In the morning you should have a gel like paste.
Heat the oven to 125 degrees and pour the seeds to a clean baking tray with paper. With a spoon, make them flat enough to be crackers. Sprinkle with sea salt to taste. Bake 1 hour first and during the second hour, open the oven once every 15 min.
Let them cool of and split in pieces. Delish but very fragile. An elegant and home made snack just like that!

Grannys chocolate easter cake


Hapiness is to eat home made choclate cake in the sun on your balcony! To make this, simply mix 500 gram of almond paste (the higher almond content the better!) with 5 eggs (add one egg at the time and whisk til creamy). Add to a form and bake ca 45 minutes in 175 degrees. Melt 175 grams of high quality dark chocolate and decorate the cake with that and fresh strawberries.

Healthy mango rasberry crumble



Inspired by the beautiful sunny weather I made this healthier crumble tonight. In a form, mix fresh mango and rasberries and a few blackberries if you feel like it (I used frozen ones that I defrozed). Top with a crumble of 0.5 dl whole grain flour, 1 dl oats, 50 gram of organic butter and 1-1.5 tablespoons of brown sugar (Just mix everything togeather in a bowl). Bake in 175 degrees for 20-25 degrees. Serve with some nice vanilla icecream or lightly wipped cream.


This recipie makes a quite small pie, for approx 3 people.

Passion fruit cheesecake

Yummy cheesecake! However, please do let this cutie sit overnight before enjoying. I had to bake it the same day as I had guests and it was alot better today when I had some. Original recipie from Leila.


For the crust, crush 150 gram of gingerbread cookies and 150 grams of Digestives. Use either a blender or in a plastic bag. Put them into your form and add 150 gram of melted butter. Mix togeahther and make flat. Bake in the over at 175 degrees for 10 minutes.


Mix 600 gram of Philadelphia cheese and 250 gram of Kvarg (not the low fat one) with a whisk until creamy. Add 1 dl of sugar and 1 dl of maizena. Blend. Add 3 free range eggs one at the time.


Use the juice from approx 15 passion fruits, it should make about 1.5 dl. Add to the batter. Now, the original recipe calls for 200 gram of melted white chokolate. I did not add that but its accordning to taste.


Pour the batter over the crackers and bake for 40 min approx still in 175 degrees. Then turn the oven off and let it sit for about 30 min in the after heat.


Let cool in fridge overnight and decorate. I used strawberries and mint leaves.

The worlds best carrot cake



I promise! The recipie is again from Leila however I add sligtly more spices and make the frosting quite alot different.


Whisk 3 organic eggs with 3 dl of sugar. Mix in a separate bowl 3 dl of flour, 1 tsp of vanlila sugar, 3 tsp of baking powder, 2 tsp of cinnamon, 2 tsp of cardemom , 1 tsp of dried ginger and a pinch of salt. Gently blend into the egg and sugar. Add 4 1/2 dl of finely grated organic carrots and 1 1/2 dl of sunflower oil.


Fill a non stick form and bake in the middle of the oven for about 55 min, its not supposed to be sticky.


Let cool off completely.


To make the frosting mix 200 gram of full fat Philadelphia cheese, the zest of one lime, and vanilla sugar to taste.


Swirl the cake with the frosting and decorate according to taste. These berries (not sure of the name?) are one of my favorites to decorate cakes with. You can find them at Coop when in season.

Sara's Bakery - Torta della Nona

This is an italian almond and ricotta cheese cake that orginally comes from Leila - my all time favorite when it comes to baking. Its perfect before for ex. going out dancing (which I did after) since it has a low flour content (compensated by cream cheese and eggs). Its a classic Italian cake and very simple to make.


Whisk 150 grams of organic butter and 300 gram almond paste creamy. Add a total of 6 free range eggs, one at the time. Add 250 grams of Ricotta cheese, the zest of one well washed orange and one lemon and one grated "bitter almond" ( I actually could not find it in the swiss stores so had to use the flavour essance - big minus!). Finally add 1/2 dl of flour. Just gently stir everything togeather - never whisk a cake batter since it makes the cake less fluffy.


Then everything goes in a cake form. Sprinkle with pine nuts and bake in 175 degrees for around 30 minutes. Try with a tooth picker, it is not supposed to be sticky.


Before serving, sprinkle with powder sugar. Serve with rasberries and some lightly whipped cream (the halbrahm, 25% fat is peeerfect).

Healthy carrot and cottage cheese bread




These are YUMMY and supereasy to make! For approx 20 of them, mix 50g of yeast with dl of finger warm water. Once transparent, add 4 dl of finely grated carrot (organic!), 2.5 dl cottage cheese, 2 tsp of salt and one tablespoon of a natural kind of oil. You need 13-14 dl of flour and maybe 4 dl of a healthier type of flour (or make the propotions as you wish). Add a little at a time and work to a nice dough. Please note that it will be quite sticky because of the cottage cheese. Do not add too much flour! I actually used muffins form and my muffin tray to avoid the mess and adding too much flour. Went fine!




Bake in 225 degree oven for approx 20 min. Lovely to serve with cream cheese, goes very well with the carrot in the bread. Enjoy the baking, and remember that its good for the soul too!

Banana bread cupcakes by Eat Live Run




I just found this cosy blog Eat Live Run and this recipie for the genious concept Banana Bread Cupcakes. I really enjoyed reading the introduction how this recipie came up 7.30 in the morning from a major craving for banana bread and frosting. And how it was made sipping Earl Grey tea in pajamas pants and leopard slippers.

Ginger carrot cupcakes


Whisk 2 organic eggs and 1 dl of organic sugar. Mix 1,5 dl of organic flour and 1.5 teaspoon baking powder, 1 teaspoon vanilla sugar, 1 teaspoon cinnamon, cardemom, and dried ginger in a separate bowl. mix togeather. Grate 2 large organic carots and add and 30 gram organic melted butter. Fill 12 small cup cake forms to 3/4 add bake off in 175 degrees in 12-15 minutes.

Let them cool off and while waiting make the frosting: 100 gram Philadelphia (full fat!), the juice and zest of one organic lemon and vanilla sugar to taste (I used about 10 grams). Blend and top the cupcakes nicely and decorate accordning to taste.

Chocolate fondants



Supersimple and superdelish! Melt 75 butter, add 100 gram high quality choclate (we used Callier 64%) and melt togeather til smooth. Wisk 2 organic eggs and 4 tablespoons of sugar fluffy. Blend all and fill 4 over prove cups. 200 degrees 10-15 min depending on your oven. Serve with a good vanilla ice cream and passion fruit. Chocolate happiness!

Swedish hard-bread "Knäckebröd"



This summer I had alot of time for things and projects you don't normally find. One of them was baking hard-bread, one of my snack and weekend-breakfast favorites. After trying several recipes this one is by far the best, from Annas Food, a very classical swedish cookbook that I just love. It was very easy to make and they are superyummy and good for you. 100% homemade so you always know exactlly what you give to your body.




For about 20, follow the recipie below:


50 grams of yeast


5 dl of water (room temeperature)


1/2 tablespoon of salt


1/2 kg (one liter) of rye flower (organic)


2 dl of all purpose flour



Mix yeast and water. Add the rest of the ingredients. Mix togeather (preferably in a Kitchen Aid or similar). Leave overnight. The next day, split into 20 pieces and use a rolling pin to form thin round breads. They are only supposed to be 1-2 mm thick! Use a fork to "pickle" them. If you want, you can sprinkle them with any type of seed that you want.


Bake off 10-15 minutes in 250 c degrees. Voila! Enjoy!
