Elins salmon quinoa salad
On friday night I went to Luzern for a wonderful girly evening with my lovely Elin. We went shopping in the rain with no real plans, but came back with alot of nice things...for example the ingredients for this smoked salmon and quinoa salad. Very good for you but still festive enough to be a Friday dinner.
You'll need (for 2)
150-200 grams of smoked salmon, finely sliced
2 servings of red quinoa
1 stalk of broccoli
1-2 handfuls of green leafs of choice
1 handful of cherry tomatoes
5 mini pickled cucumbers (if you like them)
1 handful of pumpkin seeds
A few sun dried tomatoes
Fresh basil, lemon, olive oil
Salt and pepper
1. Prepare quinoa according to the package and let cool off slightly
2. Chop up the vegetables.
3. Gently fry the broccoli for a milder taste along with the pumpkin seeds
3. Toss together
4. Drizzle with olive oil, fresh lemon juice and salt and pepper to taste.
Serve with avocado cream and some wine if you like.

Toast Skagen - swedish classic with a twist
Yesterday I celebrated a lovely friends birthday with a nice 3 course dinner. Here is the starter, a toast skagen. Very easy to make and so yummy. To change it up a bit I added some smoked salmon.
To serve 4, I used about 200 grams of prawns and 100 gram of smoked, chopped salmon. Basically mix together with 0,5dl of half cream fraiche and a table spoon or so of mayo. It shouldn't be too runny. Add fresh dill, lemon and pepper to taste. If you like horseradish that is also really nice to add. No salt is needed! Fry up 4 slices of toast in butter and slice in 2 in the middle. Top with the skagenmix and decorate with some lemon and dill or rocket salad.
Enjoy with some chilled white wine and be happy.

Parma surprise
You know that feeling when you know exactlly what you are craving for dinner? Yesterday when I came home I remembered a recipie for a started I had seen at the swedish version of Come Dine with me AGES ago. Anyway. My dear friend Gio who is becoming a healthcoach always tells me that cravings are the bodys way to tell us what we need. So I guess that yesterday I really needed goatcheesefilled parma rolls? Either way, that is what I made :)
It was so easy and still as satisfying as a friday dinner should be. The orginal reciepie is from www.recept.nu
Mash togeather 150 g of goatscheese and about 1dl of Cream Fraiche (the half fat on version is more that good enough here) with a fork. Add chives (to taste) and some black pepper. Then get your parma ham and add a good amount to each slice. Roll togeather.
Now all remaining is a nice salad. Just arrange some mixed baby leafes with some cherry tomatoes and roast some pumkin seeds (important!). Top with those. For the dressing, whisk togeather 05,dl olive oli, 1 tbs spoon honey, 2 tbs balsamic vinager, salt, pepper and about 1/3 of a finely chopped charlotte onion. Drizzle on top.
I served with some chicken to make it a complete meal. And some rose wine ofcourse. Friday bliss!

Lime chicken
One of my favorite recipies! And so simple. To make this use 100-150 g of sliced happy chicken per person. Start by frying that in some olive oil with some garlic - not a lot just enough for a nice lovely smell and taste. Add 2 dl of dairy product of choice (i used 1 dl full fat cream and 1 1dl milk, but you can go for anything from halbram to cream fraiche - as long as its possible to heat up), 1 table spoon of japneese soy, 1/2 table spoon of honey, the zest and juice of 1/2-1 lime (carefully washed), some pepper and stock of choice (chicken or veggie would be good). Whisk togeather and taste - add anything thats missng.
I served this with roasted sweetpotatoes (1 hour on 200 degrees drizzled with olive oil, salt and pepper), quinoa boiled in some veggie stock, and steamed green beans.

Simple dinner
Salad of organic rocket salad, feta cheese, tomato and avocado. Oven baked salmon. Olive oil and balsamic, with sea salt and pepper to taste. Happy days!

Vietnamese Spring Rolls
My lovely friend Åsa is in town this weekend and made me these superfresh springrolls for dinner. Its one of those great dishes that looks very fancy and complicated but that actually are really simple to make. You need to buy asian rice paper to make this. I bought mine in Asian Laden by the Tram stop Smiede Widekon.
Soak the rice paper in cold water for a few minutes until soft. Put on a wet surface for exemple a cutting board and fill them with whatever you are in the mood for! We had crabsticks, avocado, cucumber, carrotts and a bit of coriander. Roll togeather and cut to 3-4 pieces.
Great to serve with a dark leafy spinach salad and a sesamy-soy-ginger-lemon dressing and some sweet chili sauce for dipping.

Massaged broccoli salad with toasted almonds
To make it, just wash some spinach and rocket salad in ice cold water (to make it crispy and fresh). To prepair the broccoli, split it into small boquets and add to a bowl with the juice from half a lemon and a pinch of sea salt. Massage with your fingers until softer. Mix with the green leafs and toss with dressing of choice. I made a simple one with lime juice and zest, some honey, sea salt, black pepper and olive oil. Roast a large handful of almons in a pan until they get some colour. Sprinkle the almonds over the salad and enjoy!

The simplest chicken in oven dish
This so easy to make and still makes the perfect middle of the week dinner for guests, atleast along with a nice glas of white wine. I am not sure its even a recipie?
Anyway, in a form, put organic spinach, some cherry tomatoes, basil and fresh chicken. Top with chopped garlic if you wish and sprinkle with some olive oil, sea salt and fresh pepper.
In the oven it goes for about 20 minutes (if you wish, you can also fry the chicken gently in some olive oil before it goes in the form for some more color). Once the chicken is ready, top with some buffalo mozzarella (Coop Fine Food has a good option). Some steamed broccoli is also nice to serve with. Cook with love, as always <3

Simple and delish french goats cheese salad
Steam some green beans, and blend in a large bowl with organic spinach. Toss with a dijon mustard vinegrette (olive oil, balsam vinegar, diljon mustard, sea salt and pepper). Top the salad with pieces of chicken, a good goats cheese, roasted pine nuts and fresh figs. Enjoy with a good white wine!

Sunday dinner
A simple, healthy and asian-inspired meal perfect after hiking and alot of Swiss cheese and wine.
For this, prepare 1 pack of glas nudles accordning to the instruction on the package. Wash some organic spinach and other green leafs (remeber to rotate your intake of green leafs!). Slice up an avocado and one mango. Chop up some cilantro.
Mix up a fast dressing with some oil, lime juice, red chili and japanese soy. Toss with the salad.
Stir-fry some prawns and serve! Dinner is ready in 15 minutes max! To sprikle some organic mix seeds is a nice touch.

Green rocket hommus
Great to serve with a soup dinner. For this recipie (very improvised) I let half a package of chick peas (250 grams) soak in cold water over night and the next day boiled for 1 hour or so. Once cold, I mixed with 2 handfuls of rocket salad, a generous drizzle of oilve oil, sea salt and pepper. Add some water if still too thick. To serve with full grain crackers or simlpy veggies. Enjoy! I love the idea that a hommus gets some nice green colour since its apperance is quite boring normally.

Dinner for the week
I adore cooking on sundays. Preparing for a new week. For dinner I normally try to have something lighter, but still filling, filled with proteins and vegetables. Yesterday I made a vegetarian bolognaise. So simple. You will need:
Garlic
Organic Olive Oil
Vegetarian minced meet (I used Quorn)
Canned tomatoes
Fresh mushroom
Fresh herbes (I used basil and parsly)
Sea salt and black pepper to taste.
Chop the garlic and lightly fry on a low heat in some olive oil. Add mushrooms and let cook for a while. Add quorn. When ready, add the tomatoes and spice it up to taste. Let it cook for as long as you can wait. In the add, sprinkle with the fresh herbs. For dinner, I wouldnt eat this with pasta, not even dinkel or full grain, so serve with some veggies (carrots and spinach are great. A simple, italian inspired hearty meal perfect for the winter season. Enjoy!

Dinner for 2
Organic carotts in different colors (avaliable at Coop) and fennel rosted in the oven with lemon, olive oil, salt and pepper. After 15 minutes, add fresh salmon and finish. Serve with a spinach salad and wine!!

Friday dinner
Good thing to prepared when comming home from work around 20 quite uninspired and hungry. I made a red lentil soup with lemon on sunday and froze in portion bags. Dinner in 3 minutes (microwave), toped with some fresh broccoli and fresh parsly.
